The Iranian beluga sturgeon, sometimes referred to as the Caspian sea sturgeon, is an andromous fish that is a member of the Acipenseriformes family of dinosaur fish, which includes the sturgeon family (Acipenseridae). Iranian beluga caviar is a species of sturgeon that is commonly collected for its rich roe. It is a huge, late-maturing fish that can live up to 80 years.
