The Iranian beluga sturgeon, sometimes referred to as the Caspian sea sturgeon, is an andromous fish that is a member of the Acipenseriformes family of dinosaur fish, which includes the sturgeon family (Acipenseridae). Iranian beluga caviar is a species of sturgeon that is commonly collected for its rich roe. It is a huge, late-maturing fish that can live up to 80 years.
Huso dauricus kaluga, also called the “King Beluga Caviar,” is the most similar species to Huso huso beluga. The roe (or eggs) of the beluga sturgeon, Huso huso, are used to make caviar. One of the priciest forms of caviar is harvested from Iranian beluga sturgeons, which fetch between US$7,000 and US$12,000 per kilogram (2.2 pounds) or US$200 and US$500 per ounce on the market.
Because Iranian beluga sturgeon are officially classified as Critically Endangered, shipments of beluga sturgeon cavira from the Caspian and Black Seas were prohibited by the US Fish and Wildlife Service in 2005.
In 2006, the Convention on International Trade in Endangered Species (CITES) restricted all trade in the traditional sturgeon producers of Caspian and Black Sea caviar (Beluga, Ostra and Suruga) (Azerbaijan, Bulgaria, China, Kazakhstan, Romania, Russia) to Suspended. Serbia and Montenegro, Turkmenistan and Ukraine) due to non-implementation of international regulations and recommendations by the producing countries.
The ban does not apply to Iranian beluga, though. Iran has relevant fishing legislation and regulations, according to the CITES report. In January 2007, a portion of the embargo was removed, allowing for the sale of 90 tons of Iranian beluga caviar—15 percent less than the official amount in 2005.
The 2007 limits were upheld for 2008 by the Convention on International Trade in Endangered Species (CITES), which came under fire for not doing enough to save the diminishing sturgeon numbers. The maturation period for beluga sturgeon is 16–20 years.
