Iranian Sevruga Caviar :
Among caviar consumers, Sevruga Caviar (Acipenser stellatus) is the smallest and tastiest type of sturgeon. Iranian Sevruga Caviar is characterized by its dark gray luster and extremely fine grain and by its mesmerizing taste, with an almost firm texture, a creamy and nutty taste, and a unique taste of crunchy, delicious, and invigorating sea saltiness. When sevruga caviar is chewed, it releases an oil that can be enjoyed wonderfully with breadcrumbs and ends with a buttery taste on the palate.
Sevruga Caviar is harvested from sturgeon fish (Acipenser stellatus), which is native to the Caspian Sea and produces roe from the age of 8. It can be distinguished from the expensive beluga and osetra caviar by the roe size, which is usually between 2.2 and 2.5 mm in diameter. Iranian Sevruga Caviar has the strongest flavor among sturgeon caviars.
Our Sevruga caviar is packed in 30g, 50g, 100g, 250g, and 500g cans. The shelf life of sealed cans is up to 4 months. If stored properly refrigerated between -2 and +2°C (without freezing), it should be consumed within a few days of opening.

Sevruga Caviar (Acipenser stellatus) native to the Caspian Sea can only grow up to 25 kg, which is described as the most beautiful breed among all sturgeon species. Sevruga Caviar usually lives to be 22 to 25 years old, with a maximum reported age of 27 years.
In the past, during the golden age of wild fishing in the Caspian Sea, the star sturgeon was the most common and widespread sturgeon. However, it is considered critically endangered by the International Union for Conservation of Nature (IUCN) due to overfishing, and international trade in star sturgeon and its offspring, Sevruga Caviar, is restricted by CITES.
