What kind of Caviar is Sevruga Caviar ?

Caspian Sea sevruga caviar consists of a smaller roe than the other two main varieties of caviar. However, what it lacks in size, Sevruga more than makes up for in intense flavor. Sevruga Cavair  is saltier and richer in flavor, which is why it is often referred to as “Strong Flavor Caviar”.

Where is Sevruga caviar from?

In eastern Europe, it is harvested from the Sevruga sturgeon (Acipenser stellatus), the Sterlet sturgeon (Acipenser ruthenus) and the Siberian sturgeon (Acipenser baerii), which are native to the Caspian Sea and the surrounding rivers. Sevruga is the smallest of the caviar-producing sturgeons.
